Pumpkin Pie Chia Pudding (Clean Eating)

Makes 1 serving

  • 1 cup unsweetened almond milk
  • 2.5 tbs chia seeds
  • 1/2 cup pure pumpkin (we used Libby’s)
  • 1 tsp pumpkin pie spice
  • 1/2 tsp vanilla extract
  • stevia to taste

Mix all ingredients in a small bowl and refrigerate for 4 hours or overnight! Top with sliced almonds, maple syrup or whipped cream! Feel free to even mix in some greek yogurt or vanilla protein powder for an extra protein boost!
