Medium-sized head of cauliflower, chopped into florets (about 1 1/2 lbs.)
3 roasted garlic cloves (or you can use garlic powder)
1 teaspoon fresh thyme leaves
1 teaspoon fresh chives, chopped
salt and pepper, to taste If you have a fat source in your plan for this meal, you can also add that if you’d like (butter, olive oil, coconut oil, etc.)
1. Steam your cauliflower in the microwave or on the stovetop (typically takes 7-10 minutes). I have a microwave steamer, so that’s what I use. You’ll want the cauliflower to be very tender.
2. Drain the cauliflower and transfer to a blender or large food processor. Add in seasonings, garlic cloves, and fat source (optional). Blend until it reaches a mashed potato-like consistency.
